MANGO MEYER GRANITA (M^2 GRANITA) !!!


I love summer holidays for so many reasons; no school, spending wonderful time with family and enjoying summer specials like raw and ripen mangoes, palm fruit and water melon etc.  I love mangoes particularly Alphonso and Imam Pasand are my favorite varieties back home in India.  Even though we don't get such wonderful mangoes here, we still get few good ones in this season.  There are umpteen number of mango dishes all around the world.  Both raw and ripe mangoes are used in many forms.  In India during summer they do pickles using raw mango and they preserve it for the whole year.  From pickles to desserts, I love everything that is made using mango.  You name it I love it :)  








Mango is a wonderful tropical fruit loved by almost everyone.  It’s always fun to do dishes using the seasonal fruits.  Granita is such a guilt free dessert for the scorching summer... I am posting 2 granita’s; one is Meyer lemon Granita and another one is Mango Granita. We had both together; the sweetness from Mango granita and the sourness of the Meyer lemon together tasted soooo fresh and tasty :)

Here are some of the Ice-cream, sorbet and sherbet recipes to beat the heat....  




My way of serving:

Fill the bottom of the glass with the Lemon granita and top with the Mango Granita.  You can also do it in alternate layers.  Sprinkle some chaat masala and I bet that you will not stop with one glass....
Chaat Masala is available in any Indian Groceries.

Meyer Lemon Granita

Ingredients:

Meyer lemon juice - 3/4 cups
Water - 1 cup
Sugar - 3/4 cup
Zest of one lemon

Method:

1. Place the lemon juice in a non-reactive mixing bowl and set aside.
2. Combine the water and sugar in a small saucepan and bring to a boil.
3. When the sugar has dissolved, remove from the heat and allow cooling to room temperature.
4. Stir the sugar syrup into the lemon juice and transfer to a glass pan.
5. Place it in the freezer, uncovered. When the top of the liquid forms an icy layer, scrape through entire pan with a fork every 30 minutes. Return to freezer and let another frozen layer form; scrape again with fork. Repeat freezing and scraping steps until all liquid is frozen.
6. Fluff with a fork to create soft, snowy granita. Repeat this process every 30 minutes for 3 to 4hrs. 
7. The mixture should be frozen but in small chunky shavings.


 


Mango Granita 



Ingredients:

Ripe Mango - 2 cups
Water - 1 cup
Lime - 1 (freshly squeezed)
Sugar - 3 to 4 tbsp







Method:

1. Place chopped mango in the bowl of a food processor and process until smooth.
2. Transfer to a medium bowl. Add the water, lime juice, and sugar, and stir to dissolve.
3. Pour mixture into deep-sided metal or glass pan.
4. Place it in the freezer, uncovered. When the top of the liquid forms an icy layer, scrape through entire pan with a fork every 30 minutes. Return to freezer and let another frozen layer form; scrape again with fork. Repeat freezing and scraping steps until all liquid is frozen.
5. Remove from freezer, and scrape surface with the tines of a fork until it is the texture of shaved ice.
6. Fluff with a fork to create soft, snowy granita. repeat this process every 30 minutes for 3 to 4hrs. 
7. The mixture should be frozen but in small chunky shavings.
8. Return to freezer until ready to serve.
9. Granita can be stored in an airtight container in the freezer up to 2 to 3 weeks.

Ha ha the lemon one will not be allowed to set in my house. As for the mango one I will not allow it to set. Such a lot of patience needed to make this:(. better if I eat some of what you have made.What say?:)
