PAAL SARBAT/MILK SARBAT - POPULAR REFRESHING DRINK FROM RAMNAD DISTRICT(RAMANATHAPURAM)

Paal sharbat which is not only cool drink it also cools your body.  Paal is the Tamil name for Milk. Sharbat/Sherbet/sarbath is a popular Middle Eastern and South Asian drink.  So the paal sharbat/Milk Sharbat which I am posting today is Milk + Flavoring.  The 2 important ingredients used in making this sharbat are

Badam Pisin/Edible Gum
Nannari




Milk+Badam pisin+Nannari altogether is great refreshing drink for the summer.  This is one of the famous drink that is sold in Ramanathapuram District/ Ramnad.  If you are around that place thenyou would have known this.

Let’s see a brief about those 2 ingredients before enjoying my refreshing quencher

Badam Pisin/Edible Gum 
(you can use any edible gum)

This is an edible gum which looks like Miniature ice rocks.  This is used as natural coolant and they are used for making desserts.  They should be soaked in water a day before making this. When they are soaked they form like a Gel/jelly substance, this is then used with other flavoring to make wonderful desserts.

Nannari/Sarsaparilla

Sarsaparilla which is popularly called as Nannari is a wonderful herb with natural cooling Property.  The concentrate is prepared using Nannari root.  The root has a pleasant odor with astringent taste. The syrup is prepared from its root by steam distillation method, then they are mixed with sugar, water and citric acid to give Nannari syrup.  This is used as flavoring for many drinks and desserts.

Other than this Paal/Milk sharbat, this Nannari can be made used in combination with water/Soda + lime Juice.




PAAL SARBAT/MILK SHARBAT

Ingredients :

Milk - as needed (Boiled and cooled)
Badam pisin/Edible Gum - just few crystals
Nannari syrup - to taste ( as this has sweet taste you need not add sugar to it)
Some Ice cubes

  



Method:

1. Soak the Badam pisin a day before you are preparing the drink/dessert. At least for 8 hrs.  While soaking just put them in enough water.  You will see the magic next day.
2. The next day clean to see if there is any bark in it. You can just remove them using your fingers or spoon.  Drain and keep it aside for 5 to 10 minutes. Then refrigerate until you use it.
3. While serving take 2 to 3 tbsp of badam pisin in a glass, add the syrup and Milk, shake it using the shaker or give a nice stir.  Serve with few Ice cubes.



Note:

You can use any kind of edible gum which is available in market in place of Badam pisin.

CANTALOUPE SORBET

Cantaloupe is one of our favorite fruit. Cantaloupe is also known as cantaloup, mushmelon, muskmelon, cantalope, rockmelon .Cantaloupe in milkshake, juice, ice cream or even as a fruit without  any sugar tastes great.  Try this cardamom infused cantaloupe sorbet, I am sure you would love this. Difference between sherbet and sorbet take a look at this post.

CANTALOUPE SORBET





 Ingredients :

Cantaloupe - 1 ( cubed)
Sugar - 1/3 cup
Cardamom infused sugar syrup - 3/4 cup
 
 

 
Method :

1. In a bowl mix the cantaloupe and sugar keep aside for few minutes.
2. Puree the cantaloupe and transfer to a container.
3. Refrigerate for few hours.
4. Now stir in the cardamom infused sugar syrup and chill it for 3 to 4 hours or even overnight.

Cardamom sugar syrup

Ingredients:

1 1/2 cups of sugar
1 cup of water
10 cardamom pods crushed

Method :

1. In a small pan bring the water, sugar and cardamom.
2. Let it be in the flame until the sugar dissolves.
3. Remove from heat. Close with the lid for 1/2 hr.
4. Strain the mixture and chill in the fridge for 1 hour before we add to the cantaloupe mixture.
 
 


If your using Icecream follow the instruction as given in the manufacture's guide.

Else Follow this

1. Freeze the above mixture, when it is frozen slightly , churn it in the blender.  Repeat this one moretime.
2. Then freeze it for 6 to 7 hours.
3. Keep the frozen mixture for few minutes, before serving.

Scoop it !!!  Beat the heat and enjoy the fragrant/fresh sorbet !!!
 
 
 
 
 
 


Note :

1. You can prepare the cardamom syrup and cantaloupe mixture ahead of time.
2. If you are using the ice cream maker, make sure the mixture is chilled for atleast 3 to 4 hours minimum, overnight would be good.
3.Keep the frozen sorbet out for 10 minutes before scooping.

SPARKLING CRANBERRY PUNCH !!!

Hope everybody enjoyed  the Christmas !!!  Yah we too.  It was  a white Christmas so we enjoyed the weather as well as tasting  all  baked goodies. Coming to the post  Mmmmm its sparkling fruit punch which is very refreshing.   This Fizzy drink with Cranberry and Lemon makes this punch a hit :)  Hope u all like it.  Cheers ! Over to recipe now....











 
SPARKLING CRANBERRY PUNCH

Ingredients :

Cranberry - 2 cup
Sugar - 1 cup
water - 1 1/2 cup
Any lemon flavored Aerated drink - 700 ml (7up, Sprite...)
Lemon juice - optional ( if u need it sour you can add few drops)
Slices of lemon - few
Ice cubes
Mint for garnishing










Method :

1.  Add water, sugar and cranberry in a big pot.
2. Let it boil once the all the cranberry are popped up.
3. Let it be in the flame for 5 more minutes, then drain it.
4. Once it is cooled it can be stored in the refrigerator.
5. At the time of serving add the Aerated drink, add few slices of lemon.
6. Add Ice cubes and garnish with mint leaves.

Enjoy the refreshing drink !!!






 

 




Note :

1.  As sugar is in both the cranberry extract as well as in the Aerated drink.
Add the sugar and lemon according to your taste.

FALOODA



Hope this is everyones favourite dessert. So simple to make but tastes so yummy and delicious.....Enjoy having this.



Ingredients :

Milk - 2 cups
Rose syrup - Required sweetness
Falooda sev - some (readily available in market now a days)
Home made rose flavoured jelly cubes - some
Vanilla or kulfi ice cream
Chopped nuts - few for garnishing
Sugar if required
Tukmaria seeds (sabja seeds) - soaked in water befor 2 hrs




For making Jelly :

Gelatine or You can substitute with agar agar
water and rose syrup
Do this according to the packet instruction.
Set in the fridge and make small cubes.

Falooda sev :

Cook the sev in boiling water until soft and add to the boiling milk and add the rose syrup adjust the sweetness or add some sugar. Refridgerate 2 hr before.




Method :

1. In a tall glass add the sev and rose milk.
2. Add the jelly cubes to it.
3. Drain the sabja seeds and add a tbsp to it.
4. Add a scoop of ice cream and top it with some nuts while serving.
5. Lovely dessert is ready...

GO GREEN MOCK COCKTAIL



This drink is served by my friend during the potluck party, A slight variation in the drink what I do regularly has changed the flavour of the drink so I thought of doing this and share with you all. Really this cocktail will be so refreshing and tasty. The ingredients added in this makes you hungry and attack the party foods(Just Kidding) . Here is how you should make this drink..



Ingredients :

Sprite or Club soda - 2 glasses
Eno fruit salt - 1 tsp
Jal Jeera - 1 tsp
Ice cream flavour syrup - 2 tbsp ( This was the difference which gave flavour to the drink)
Sabja seeds - 1 tsp (optional)
Ice cubes for serving



Method :

1. Put the sabja seeds in the water for 1/2 hour and drain it. You can see the seeds in the picture.
2. Mix all the ingredients and put some ice cubes.
3. Serve in the decorated glass. Add the seeds atlast in the glass.



Note :

1. If icecream falvour is not available use any kind of syrup you like.
2. If your using sprite add the sryrup according to your sweetness.

DILL BUTTERMILK


I bet this buttermilk will surely makes you cool and keep you fresh...


Ingredients :

Curd(youghurt) - 1 cup
Cucumber slices - 1/2 cup
Dill leaves - 2 sprig
Ginger - 1/4 inch
Chilli - 1/2
Salt - As required
Ice cubes - for serving
Water - 1 cup



Method :

Blend all the ingredients in the blender and serve chill with ice cubes...You will surely say aaaaaaaaaaaahhhhhhhhhh.



Note :

Those who are not familiar with dill leaves You can see the picture which I kept near the glass. If dill leaves are not available you can substitute with some mint leaves too.

MANGO LASSI


Lassi is an Indian yogurt drink and most popular beverage in summer . It can be sweet or salty and is flavored with spices or with fruits.

MANGO LASSI 
Ingredients :

Mangoes (sweetened or unsweetened) – 2 cups 
(You can also replace good sweet Mangoes for Mango puree, in that case use pulp from 2 mangoes)
Plain Yogurt – 1 cup
Milk – 1/2 cup
Sugar – 2 Tbsp (Increase or decrease the amount according to your preference and the sweetness in the Mango)
Green cardamom powder – 1/4 tsp (
Optional)
Ice cubes

Method :

1. Put all the ingredients in the blender and process to smooth puree. Chill and serve !!!
2. Garnish cardamom powder on the top while serving.
2. You  can also added small pieces of chopped mangoes too, which is absolutely optional.

STRAWBERRY MILKSHAKE

Strawberry its one of gods wonderful creation. It has sweet fragrance and when it is blended with milk gives yummy milkshake. Packed with vitamins, fiber, and particularly high levels of antioxidants known as polyphenols, strawberries are a sodium-free, fat-free, cholesterol-free, low-calorie food. The heart shaped fruit is the first clue that this fruit is good for us.


Ingredients :

Milk - 1 cup
Strawberry preserve - 2 tbsp (sweet as required)
Strawberries - 8
Ice cubes


Method :

1. Blend the above ingredients in the blender.
2. Serve it with ice cubes.
3. Refreshing yummy shake is ready to serve.
4. Because of slight sounrness of strawberry the milk will start changing its texture so serve immediately. But it does not affect the taste.
5. Instead of strawberry preserve you can use sugar too.
6. Here I have added small bits of strawberries in the milkshake.
