BENDAKAYA KOORA ( OKRA STIR FRY)

We had a nice and wonderful long weekend hope you all too have enjoyed to the fullest. I missed all your sweet posts for last ten days and some how managed to come back.. I still need some time to be regular in visiting all your lovely posts because I am so much tied up with works and also engaging my kid cos of his vacation. Till then I will be posting dishes once in a while for some days. Will be back soon to normal blogging routine and also atleast I want my blog to be live with all your inspiring and encouraging comments. Just did simple dishes like rasam(chaaru) and okra fry yesterday and wanted to share with you all.

Some Health benefits of Okra :

1.Okra is good in normalizing the blood sugar and cholesterol level.
2.Okra fiber is excellent for feeding the good bacteria.
3. Okra is used for healing ulcers and to keep joints limber. It helps to neutralize acids, being very alkaline, and provides a temporary protective coating for the digestive tract.
4. Okra is good for summer heat treatment.
5. Okra is good for constipation.
6.Okra is good for asthma.
7. Okra protects you from pimples and maintains smooth and beautiful skin.
8. There are other medicinal uses of okra, like its protection against trans fats.

Still there are so many health factors involved in okra. I think because of all these reasons our parents has told us that it is so good for memory and helps us doing mathematics. If they say all the above reasons sure we would never tasted and liked it. So some how they played an easy way to make us eat the veggies . So now I am following the same with my kid too. He loves it so much. This is easy fry and tastes so yummy with hot rice, podi, dhal and rasam.

Ingredients :

Okra - 1/2 kg
Garlic - 2 pod
Chilli powder - as required
Pepper powder - little
Salt
Oil
Mustard and urad for seasoning - 2 tsp
Curry leaves few
coriander for garnishing.

Method :

1. Slice the okra to medium size pieces.
2. Heat oil in the frying pan.
3. Add the mustard and urad dhal.
4. Add the curry leaves, okra and crushed garlic pod saute well until they all well roasted.
5. Add the salt and spice powder according to your taste.
6.Garnish with coriander leaves.

Note :

1. Add tbsp of tamarind extract or curd to avoid stickiness.
