MERINGUE COOKIES - SWEET PUNCH

Its time to post the Sweet punch of this month.  The theme was Meringue.  This Meringue can be used as basis for various desserts like Pavlova, Baked Alaska ...... Meringues used like cookies are baked at a very low heat for a long time.  They are very crisp and dry. The Meringue can be kept for at least a week if stored in an airtight container.  Since this month was overloaded with so many desserts, I wanted to go simple.  So I choose to make cookies with my favorite flavors,  but the flavors are endless.  You can play with various colors, flavors and designs.  I did three flavors Peppermint, Pistachio, Chocolate.. Hope you all enjoy my flavors.....

MERINGUE COOKIES

This is my measurement I follow everytime I make Meringue for Desserts.  Mine works great without adding Cream of tarter.  

Ingredients :

Egg whites - 3 eggs
Granulated Sugar - 1/2 cup
Confectioner sugar - 1/4 cup
Corn flour - 1 tsp
Vanilla extract - 1 tsp ( add this if you are not adding any other flavors)

Method :

1. Put the egg whites in a bowl and whip until soft peaks form. Increase speed to high and gradually add  both sugar and tsp of cornflour until stiff peaks are formed. (The whites should be firm but moist.)
2. I divided this mixture into 3 parts in small bowls.( see the flavors)
3. Pipe them in the pan covered with Parchment paper.  Bake them in the 150°f preheated oven for 2 to 3 hrs.  Switch off the oven.  Let it dry in the oven for another 1 hr.  Then take out carefully and store in the Airtight container.






Peppermint Meringue Cookies :

Add a drop of Pepper mint extract ( optional), Pipe it and sprinkle with crushed Candy cane.




  
Pistachio Meringue Cookies :

Pistachio Extract + Green color  should be added at last and give a whisk. Add chopped pistachios on the top before Baking. 

 


Chocolate Meringue Cookies :

Add 1/4 cup of cocoa powder and fold it gently until well blended. 

 


Note :

1. You can serve this cookies with any of your favorite desserts.
2.  You can sandwich the cookies using Ganache, mousse, Pistachio cream, pastry cream, whipped cream...etc.

We had the Chocolate Meringue Cookies with Nutella :)
